Not your average blueberry cobbler

Look for any Blueberry Cobbler recipe, and most will have butter melting in the pan, pouring batter in and topping with blueberries, then baking. Although delicious, I'm sure (because butter, blueberries and batter cannot be bad in any way), it is more of a blueberry bread pudding type of result. That's just not what I'm looking for in a true cobbler. Especially when vanilla ice cream is involved.


This recipe has ingredients that are in my wheelhouse. And yes, butter is included. Sugar is there. But so is a match made in heaven: CINNAMON AND SUGAR. Cinnamon is like the center of my spice universe...one of those spices I buy in the big jar, you know?


This is the perfect summer dessert. Just have toothpicks handy for afterwards.


ingredients:

For the Filling:

6 cups blueberries

1/3 cup sugar

1/3 cup brown sugar

2 1/2 tbsp. lemon juice

1 tbsp. corn starch

1/2 tsp cinnamon

For the Topping:

1 1/2 cups all purpose flour

1/3 cup brown sugar

1/3 cup sugar

1 1/2 tsp baking powder

1/2 tsp salt

1 stick butter cut into small pieces

1/3 cup boiling water

Additional Topping:

1 tsp cinnamon

2 tbsp. sugar


instructions:

Preheat oven to 375°


For the Filling:

  1. Rinse blueberries and place in large mixing bowl.

  2. Sprinkle sugar, brown sugar, lemon juice, corn starch and cinnamon over blueberries and stir gently. Let sit for 5 minutes and stir again.

  3. Pour blueberries into an oval 3 quart baking dish.


For the Topping:

  1. In a medium mixing bowl, whisk flour, sugar, brown sugar, baking powder and salt together.

  2. Using a pastry blender (or fork), mix butter into flour mixture until mixture becomes crumbly.

  3. Pour boiling water into flour mixture and stir until combined.

  4. Spoon mixture over blueberries and spread gently making sure to cover the blueberries.

  5. In a small bowl, mix cinnamon and sugar together and sprinkle on top of the cobbler.

  6. Bake uncovered for 40-45 minutes or untill topping is baked thoroughly and has started to brown. Remove from oven and let sit for about 10 minutes.

  7. Serve warm with vanilla ice cream (we like Breyer's Homemade Vanilla!). Enjoy! (Be sure to refrigerate leftovers).
