Sourdough Chocolate bundt Cake

Fortunately a bundt cake has its own little indentations for portion sizing.

INGREDIENTS:


1 3/4 cups all-purpose flour

3/4 cup cocoa powder

1 tsp baking soda

1 tsp baking powder

1/2 tsp salt

1 cup milk

3/4 cup vegetable oil

2/3 cup dark brown sugar

2/3 cup granulated sugar

1/2 cup sourdough discard (or greek yogurt)

2 eggs, at room temperature

1 tsp vanilla extract

1/2 cup hot fresh brewed coffee


Chocolate Ganache:

1 cup heavy cream

8oz dark chocolate chips

Optional: mini chocolate chips, for topping (recommended)


Instructions

Preheat the oven to 350°. Grease a 10-cup bundt pan with butter, then dust with cocoa powder or flour. Set aside.


Make the batter:

In a medium bowl, whisk together the flour, cocoa powder, baking soda, baking powder, and salt. Set aside.

In a separate large bowl, whisk together the milk, oil, both sugars, sourdough discard or yogurt, eggs, and vanilla until well combined.

Add the dry ingredients to the wet, and use a wooden spoon or spatula to gently mix until just combined.

Then, pour the hot coffee into the batter mixture. Quickly and gently mix until just combined and the batter is smooth.

Pour the batter into the prepared bundt pan.


Bake, cool and serve:

Bake at 350F for 35-40 minutes, or until a toothpick inserted into the middle comes out clean or with moist crumbs.

Remove from the oven and allow to rest in the bundt pan for 10-15 minutes, until you see the edges of the cake start to release from the sides of the pan.

Then, carefully invert onto a cooling rack and allow to cool until warm.

While cooling, make the chocolate ganache. Place the chocolate into a medium bowl. Heat the heavy cream in the microwave until hot (~1 minute). Pour the hot heavy cream over the chocolate and let sit for 5 minutes. Then, whisk until smooth and glossy.

Pour the chocolate ganache over the warm cake, then top with mini chocolate chips, if desired.

Slice and serve. Enjoy!
