Grandma's Oatmeal Cake

Grandma made this cake all the time when I was young. There are a lot of recipes out there for oatmeal cake, but none that I could find with this homemade buttercream frosting. My sister makes it all the time, and I really just started making it in the last few years.


It's similar to a spice cake, or maybe even a carrot cake base without the carrots. Either way, it must be consumed with a cold glass of milk to get the full effect of this deliciousness.

Ingredients:

1 cup old fashioned oats

1 ½ cups boiling water

½ cup regular Crisco

2 eggs

1 cup dark brown sugar

1 cup granulated sugar

1 ½ cups flour

1 tsp baking soda

1 tsp cinnamon

½ tsp salt


Directions:

 Preheat oven to 375° Grease 9x13 baking dish


Add oatmeal to boiling water. Set aside and let cool.

Blend flour, soda, cinnamon and salt in small bowl and set aside

Blend Crisco, eggs, and both sugars until creamy.

Add cooled oatmeal and flour mixture.

Spread in baking dish (batter will be thick)

Bake 25 minutes or until toothpick comes out clean


Let cool and frost with homemade frosting:

Frosting: 1 stick softened salted butter, 1 softened block cream cheese, 2 cups powdered sugar, 2 tsp vanilla extract
