Scalloped potatoes & Ham

For layering :
3 lbs russet potatoes
1 large onion, thinly sliced
2 diced ham
4 cups cheddar* - divided
For the sauce:
4 tbsp butter
⅓ cup flour
3 cloves minced garlic
Add:
3 cups whole milk
1 tsp dry mustard
½ tsp thyme
½ tsp paprika
salt & pepper to taste
(*I used Aldi brand cheddar parmesan)
Preheat oven to 400° and spray 9x13 baking dish.
Melt butter in sauce pan and add flour and garlic. Mix until paste forms.
Add milk and seasonings and stir until it thickens. Remove from heat and add 2 cups cheddar parmesan or 2 cups cheddar and ½ cup grated parmesan.
In 9x13 pan, layer half of the potatoes, onion, and ham. Pour half of the sauce evenly over that layer, then repeat. Top with additional 2 cups shredded cheese.
Bake COVERED for 60 minutes, then remove foil and bake another 30 minutes or until potatoes are tender and cheese is browning.
