Is anything really top secret anymore? It sounds fascinating, like we know something no one else knows about. The chances that we are the only ones that know this one thing and it's never been created before are slim to none, but it's sure exciting to pretend. Let us pretend for a moment, shall we?


I'm really not sure when I started making salmon patties. It was probably something I learned from my mother-in-law, but I know for sure she didn't use my secret ingredient. In fact, I know I didn't look this up because it was before the days of the world-wide-web. There was no Google. The great thing about recipes is we get "inspired" by ones we find, but we fine-tune them to make them a special family recipe that can be handed down. I'm pretty sure in the history of the world (or maybe just yesterday), someone thought to use.....are you ready for it? RITZ CRACKERS. Most recipes you find use saltines or bread crumbs, but the salty and buttery goodness of these crackers is pure magic. I don't use generic wanna-be Ritz, and in fact, I use Ritz for any type of casserole topping or in any recipe that calls for bread crumbs. Like meatloaf. Ritz Crackers in place of bread. You're welcome. OK, I'll get on with it.


Salmon patties are quick and easy, and you can make a Southern meal out of them which includes cheese grits and pinto beans....and you could even top the whole meal with Chow Chow or some sort of relish. We often just eat salmon patties on white bread with tartar sauce as the "mayo", a slice of tomato, and sliced onion.


Here's the "Top Secret" Recipe:


For 3 patties:


(1) 16oz can of pink salmon (Like Double Q), drained and the row of bones removed

(1) egg (if making more patties, just use 1 egg per can of salmon)

10-12 crushed Ritz Crackers (again, per can of salmon)

You can add chopped onion if you'd like. You won't need salt.

*Get your hands messy and mix this all up. Form patties.


Cover the bottom of your skillet with vegetable oil and heat until it starts sizzling. Place patties in hot oil and cook about 4-5 minutes per side until golden brown and crispy.
