Shrimp Alfredo Bake

You can call this Garlic Shrimp Penne Alfredo, or Shrimp Alfredo Penne, or just Shrimp Alfredo. It doesn't really matter, because it's homemade alfredo, and it involves shrimp, pasta, and garlic. Ooh. And cheese. I have found the cheese of my dreams.


It's from Aldi, and I haven't bought shredded cheese in a bag ever since. Just get a good shredder and know this is your new favorite cheese. Cheddar & Parmesan. You're welcome.

The cheese of your dreams. Aldi's Cheddar Parmesan.

Ingredients:


  • 12 oz penne, cooked

  • 3 tbsp butter, divided

  • 3 cloves minced garlic

  • 1-1.5 lb peeled & deveined shrimp

  • 1 tbsp dried parsley

  • 2 tbsp all purpose flour

  • ¾ cup milk or cream

  • ¼ cup chicken broth

  • 1/4 cup grated parmesan

  • 1 cup diced tomatoes

  • ground pepper to taste

  • 1+ cup freshly grated cheese of your choice (I used Aldi brand cheddar parmesan)


Instructions:


Preheat oven to 350°.

In a large skillet, melt 1 tbsp butter. Add garlic, shrimp, and parsley, and season with a little salt. Cook until. shrimp is just pink. Transfer to a plate.


In the skillet juices, add 2 tbsp flour and stir Into a paste-like mixture. Add milk and broth and bring to a simmer until It’s smooth and creamy. 


Stir In ¾ cup of grated cheese and ¼ cup parmesan. Season with salt & pepper. Add shrimp, tomatoes, and cooked penne and toss until combined. Transfer to 9x13 baking dish. Top with a little more cheese and bake until cheese Is browned and bubbly.
