Tortellini soup

This is such a simple delicious soup. If you have the ingredients handy, it can be ready in about 20 minutes. Keep a bag of frozen cheese tortellini in the freezer, some canned petite diced tomatoes, and Roasted Chicken Better than Bouillon base in the fridge, and the only fresh ingredients you'll need are baby bella mushrooms and a bag of baby spinach.
I used to buy chicken broth, but now I just make my own with the roasted chicken base. I just add it to hot water. If you haven't tried it yet, go get some! You may never buy chicken broth again.
I do think this soup would be delicious with some shredded chicken in it as well, we just choose to make it without.

Ingredients:
2 pints baby bella mushrooms, sliced
1 bag fresh baby spinach
2 16oz cans petite diced tomatoes, drained
20 oz bag of frozen cheese tortellini
8 cups chicken broth
Instructions:
Add chicken broth to pot. Tip* I use ‘Better Than Bouillon’ Roasted Chicken Base to create my own broth, or add to store bought chicken broth for more flavor*. Bring to heat.
Rinse mushrooms, saute in butter, seasoning with Jane’s Crazy Salt and a few dashes of balsamic vinegar. Don’t overcook - no mushy mushrooms allowed. Add mushrooms and juices to chicken broth.
Add drained tomatoes and bag of spinach and let cook until spinach is wilted. Bring to boil and add tortellini. Let boil 3 minutes until tortellini Is done. Don’t overcook.
Serve with shredded parmesan cheese and fresh buttered bread
